Traci's Squash Pies
MAKES 2 PIES
2 cups squash, finely grated
1 1/2 cups granulated sugar
3 eggs, beaten
1 stick butter or margarine, melted
1 tablespoon all-purpose flour
1 teaspoon flaked sweetened coconut
1 teaspoon vanilla extract
2 9-inch frozen deep-dish pie shells, slightly thawed
Preheat oven to 350 degrees. In a medium bowl, combine all ingredients. Pour into pie shells and bake 40–45 minutes or until golden brown. Allow to cool slightly on wire rack. Serve warm.
