Crab dip

Serves 10–12
3 tablespoons butter
3 shallots, peeled and sliced
½ cup heavy cream
3 tablespoons mascarpone cheese
12 ounces cream cheese, softened
½ cup chopped green onions
1 teaspoon hot pepper sauce
¼ teaspoon Worcestershire sauce
1 pound crab meat
2 ounces grated Swiss cheese
In a large skillet over medium heat, melt butter, and saute shallots until tender. Add cream; simmer mixture until it reduces by two-thirds. Reduce heat to low, and add mascarpone cheese and 3 ounces of cream cheese. Gradually stir in remaining cream cheese, stirring constantly, until thickened. Add green onions, pepper sauce and Worcestershire, and remove from heat.
Turn on oven broiler, and position a rack to within 6 inches of heat source. Gently fold crab meat into mixture; pour into a 1½-quart baking dish, and sprinkle with Swiss cheese. Broil until cheese is melted and golden. Serve with crostini, crackers or raw vegetables.
