SERVES 8–10
1⅓ cups all-purpose flour
¾ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder
¾ tablespoon cinnamon
5⅓ tablespoons butter
2/3 cup sugar
2 large eggs, lightly beaten
1 teaspoon vanilla
1 ripe banana, mashed
½ cup grated zucchini
½ cup chopped walnuts
Preheat oven to 350 F. Grease an 8-by-5-by-3-inch loaf pan.
Whisk together flour, salt, baking soda, baking powder and cinnamon. Using a mixer on high speed, blend butter and sugar together. Switch to lowest speed, and add flour mixture until all is blended and has the consistency of brown sugar. Gradually beat in eggs and vanilla. Fold in banana, zucchini and walnuts. Bake for 60–65 minutes or until done. Cool on a rack.
