½ cup rolled oats
½ cup water
1 tablespoon whey, yogurt or lemon juice
½ cup water
¼ teaspoon salt
½ cup pumpkin puree
1 teaspoon pumpkin spice
¼ cup walnuts
1 teaspoon honey

Prepare oats the night before by soaking them with ½ cup water and whey, yogurt or lemon juice in a small bowl overnight, or for 10–12 hours, in a warm place. The next morning, in a small pot, bring ½ cup water and salt to a boil. Add soaked oats, pumpkin puree and pumpkin spice; reduce heat to low, cover and simmer for 3 minutes, stirring occasionally. Remove from heat and let sit for 3 more minutes, then add walnuts, honey and butter.
