"Aiken for more" carrot souffle
Serves 6
2 pounds cooked carrots, mashed
1 stick butter, melted
1 teaspoon baking powder
3 tablespoons flour
3 eggs, beaten
1 cup sugar
1/4 teaspoon cinnamon
Mix all ingredients in food processor or blender. Pour into 1 1/2-quart casserole sprayed with cooking spray. Bake at 400 degrees for 15 minutes, then lower oven to 350 degrees and continue baking for 45 minutes.
