Empanadas are small, stuffed pastries, common in Spanish and Latin American cuisine, that are wonderfully versatile. Part of their appeal is that they can be made in different sizes, stuffed with meats, vegetables, fruits, nuts, cheeses—just about anything you like—and served as appetizers, entrees or desserts. Easy empanadas
Roquefort-honey-walnut empanada filling
6 ounces of Roquefort cheese, crumbled
4 ounces cream cheese, softened
½ cup chopped walnuts
Honey
With a mixer or food processor, combine cheeses and walnuts and blend well. Cover with plastic wrap and chill 30 minutes. When ready to fill empanadas, place a scoop of cheese mixture on dough, and drizzle with a little honey. (You may also wish to drizzle the baked empanadas with honey when they come out of the oven.)
