Strawberry Delight Salad
SERVES 4–5
16 ounces strawberries, quartered
1 11-ounce can mandarin oranges, drained, each slice halved
1 – 2 teaspoons granulated sugar
4 – 5 large lettuce leaves, chopped to bite size
1 16-ounce tub cottage cheese
1 cup pecans or walnuts, chopped
1/2 – 3/4 cup French dressing
In a medium bowl, combine strawberries, orange slices and sugar. Cover and refrigerate. When ready to serve, arrange ingredients on salad plates as follows: bed of shredded lettuce, strawberry-orange mixture, cottage cheese and chopped nuts. Drizzle with French dressing.
