Serves 4–6
3 small yellow crookneck squash, sliced
1 small Vidalia (or white) onion, chopped
2 medium tomatoes, chopped
1 small green pepper, seeded and chopped
1/2 cup celery, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons long grain rice, uncooked
2 tablespoons butter or margarine
1 tablespoon brown sugar
Preheat oven to 350 degrees. Combine all ingredients except butter and brown sugar in 1 1/2-quart casserole sprayed with cooking spray. Dot with butter and brown sugar. Bake, covered, for 50 minutes.
