Spicy sassy pasta
SERVES 4
1 16-ounce box rigatoni, mostaccioli or cellentani pasta
2 12-ounce cans diced tomatoes
1 12-ounce package pre-sliced pepperoni
1 tablespoon dried red pepper spice, or according to taste
12 ounces Parmesan cheese, shredded
Cook pasta according to package instructions and drain well. Drain tomatoes well. Gently stir the tomatoes, pepperoni and red pepper spice into the pasta, using more or less according to taste. Spoon onto plates and sprinkle generously with Parmesan cheese.
