
SERVES 6
5 cups watermelon balls, chilled
6 Medjool dates, pitted, sliced into slivers
1/4 teaspoon salt
1 tablespoon fresh lime juice
1/3 cup roasted pistachios, chopped
In a large serving bowl, combine watermelon and dates. In a small bowl, stir salt into lime juice, drizzle over melon and toss. Sprinkle with pistachios just before serving.
