SERVES 6
4 large sweet potatoes, peeled and boiled
¼ cup butter, cut into small pieces
2 eggs, beaten
⅓ cup granulated sugar
2 teaspoons baking powder
1 teaspoon salt
Preheat oven to 350 degrees. In a large mixing bowl, mash sweet potatoes, then fold in butter pieces, eggs, sugar, baking powder and salt. Spoon into a buttered 8-by-8-inch square or round casserole dish. Bake 30–40 minutes or until brown.
