SERVES 2–4
3 tablespoons olive oil
1 medium onion, chopped
5 garlic cloves, chopped
1 bunch kale, chopped, tough stems removed
4 stalks celery, finely chopped
1 bunch green onions, chopped
Salt and pepper to taste
In a medium skillet, heat olive oil and lightly saute onion and garlic over medium heat until soft. Lower heat, then add kale, celery and green onions. Cover for 6–8 minutes, stirring frequently. Salt and pepper to taste.
