1 package lemon cake mix
1/2 cup granulated sugar
3/4 cup canola oil (or vegetable oil)
1 cup apricot nectar
4 eggs
Glaze
1 1/2 cups confectioners’ sugar
Juice of 1 1/2 lemons
Zest of 1/2 lemon
Preheat oven to 325 degrees.
In a medium bowl, blend cake mix, sugar, oil and apricot nectar. Mix in eggs, one egg at a time. Grease and flour a 10-inch tube pan, then bake for 1 hour. While the cake is cooling, make the glaze by mixing sugar, lemon juice and zest together in a small bowl. Pour over warm cake.
