Bobby's mashed potatoes
SERVES 6–8
6 medium potatoes, peeled and cut into quarters
4 hard-boiled eggs, peeled
2 tablespoons sweet pickle relish
1 tablespoon yellow mustard
1½ cups mayonnaise
Salt and pepper
Place potatoes in a 5-quart pot, cover with water, bring to a boil and continue to boil for 15 minutes or until potatoes are soft. Drain all water from the pot and add 3 hard-boiled eggs. Using a potato masher, mash the potatoes and eggs until they are smooth, with no chunks. Add relish, mustard and mayonnaise, then salt and pepper to taste. Stir well. Transfer into a medium serving bowl and garnish with slices of the remaining hard-boiled egg. Serve warm or chilled, as desired.
