Don't give up

Smashed cauliflower
Head of cauliflower
1 clove of garlic
½ teaspoon of salt
Pinch of white pepper
1 tablespoon of butter
¼ cup of milk
Chopped Chives for garnish
Olive oil

Cut up head of cauliflower and place in double boiler. Steam cauliflower in the double boiler for about 15 minutes or until it is soft. Put half of the steamed cauliflower into food processor and pulse the processor a few times. Then put the additional half of the steamed cauliflower into the processor.

After the cauliflower is processed well, add in 1 clove of garlic and continue to process.
When the garlic has mixed into the cauliflower, stop the processor and add ½ teaspoon of salt, a pinch of white pepper, and a ½ a tablespoon of butter.

Continue to process the mix and add ¼ cup of milk. Add another ½ tablespoon of butter.
Pour into a bowl, and if you want more flavor, garnish with some chopped chives and a bit of olive oil.
