Betty's apple pineapple coleslaw
SERVES 4–6
3 cups green or red cabbage, shredded
1 cup apple, unpeeled, cored and diced
1 cup pineapple chunks, drained
1 cup miniature marshmallows
1/2 cup celery, chopped
1/2 cup mayonnaise
In a medium bowl, combine the cabbage, diced apple, pineapple chunks and miniature marshmallows. Add the celery and mayonnaise and toss lightly until well coated. Cover and refrigerate until ready to serve.
