While their spouses at the State House stewed over government issues, members of the Palmetto Cabinet cooked up a recipe collection with some South Carolina flavor.
Nothing Could Be Finer is the second cookbook from the nonpartisan Palmetto Cabinet—spouses of past and current General Assembly members and Constitutional officers, plus first ladies. Proceeds from cookbook sales fund special projects for the Governor’s Mansion, such as the recent purchase of an original Elizabeth O’Neill Verner watercolor.
Several of the recipes shared below are from Nothing Could Be Finer, which features hundreds of favorites from state leaders and S.C. restaurants, plus vignettes about interesting S.C. people and places.
“We wanted it to be a sampling of what South Carolina has to offer,” says cookbook co-chair Amelia Cotty.
