SINGLE-SERVING TIRAMISU
MAKES 4 SERVINGS
2 cups heavy cream
1 teaspoon rum extract
8 ounces mascarpone cheese, softened
½ cup powdered sugar
16 ladyfingers
1 teaspoon unsweetened cocoa powder
Chocolate bar (sweet or semisweet) for shavings
Combine cream, rum extract, mascarpone cheese and powdered sugar in the bowl of a stand mixer until well blended. In four individual serving bowls, place a layer of 2 ladyfingers in the bottom, then scoop a layer of creamy filling on top and dust with cocoa powder. Repeat with another layer of 2 ladyfingers, filling and cocoa, and finish with chocolate shavings on top. Refrigerate at least 3 hours before serving.
